"Lu Pistate and Masses"
A winemaking technique practiced for centuries in Italy, consisting of two phases: "Lu Pistate," or barefoot manual pressing in the "Trocche," which frees the must from the skins, creating "Mosto Fiore," and the subsequent "Lu Messe," or "Messe," in which the must is transferred to wooden or concrete barrels where alcoholic fermentation occurs spontaneously , without the addition of sulfites or selected yeasts. This traditional white winemaking technique gives us a unique wine, an authentic expression of Italian winemaking history and culture.
