ORIGIN OF THE GRAPE VARIETY

Montepulciano is a native grape variety of central Italy, particularly in the area between Marche and Abruzzo. Several documents dating back to the 1700s attest to this. Specifically, the grape's native land appears to be Torre de' Passeri in the province of Pescara.

VINIFICATION

Harvested by hand, unlike traditional red winemaking, it's not necessary to reach full phenolic maturity, so it's best to rely on technological maturity to achieve the desired sugar content and acidity. However, it's best not to harvest too early to avoid producing herbaceous, tart wines that lack full aromatic profile.

The grapes are vinified “in bianco” (without contact with the skins).

The fermentation yeasts are indigenous, selected from the local flora and linked to its biodiversity.

Fermentation is carried out at a controlled temperature.

The maturation at the end of fermentation on the good lees allows it to acquire complex and important tones

Recommended pairings

Excellent with white meat dishes. It also pairs well with cheeses, dairy products, cured meats, and seafood.
