Historical notes: the first evidence of the cultivation of the Cesanese grape variety in the Olevano Romano area dates back to the time of the first Latin and Aequi settlers.

It is believed that the latter gave this variety its name, inspired by the hard work of reclaiming and cultivating the steep hillsides. From the Latin word "caesae," meaning places with felled trees, the name of the Cesanese variety has passed into contemporary viticultural history.


Geology of the plot: Middle-fine Miocene gray and yellowish sandstones.



Planting density: Espalier with Guyot pruning, 5500 vines/Ha yield per hectare 80 quintals, South South-East orientation.


Harvest period: second, third ten days of October.


Vinification: The 100% Cesanese grapes are selected on the vine during the harvest and the selection continues in the cellar before soft crushing and destemming.

Removal of the still lightly colored must with a 15% bleeding by weight to improve the quality of the esterification; maceration and fermentation at around 27°C with natural yeasts from the skins.

Pumping over and aeration to extract and fix the colour continued until the alcoholic fermentation is complete.

Sensory evaluation: Ruby red color tending towards garnet; Intense aromas on the nose, red fruits and spices such as licorice and ginger.

On the palate, it has great structure and austerity, accompanied by a texture of soft tannins; an excellent aftertaste of morello cherry.

Food pairings: red meats and mature cheeses.

Recommended pairings

Excellent with red meats. It also pairs well with aged cheeses.

Serving temperature

Serve in large red wine glasses at 18°C.
