A London Dry that gazes at the Mediterranean and wears its Mediterranean hues. Enhanced with panela, a whole sugar honey made from fresh sugarcane juice. This is a 100% natural gin . Its main botanicals are juniper berries, coriander, Syracuse PGI lemon peel, orange peel, Modica almonds, rosemary, broom, and Sicilian sugarcane honey. Distillation is slow and continuous in a copper still.

It has a clear, crystalline appearance. The nose is decisive, clean, and intense with notes of juniper, green tea, lily, lemon and orange zest, black pepper, thyme, and lemon verbena. Iodine and mineral notes are also present. On the palate, it is dry, clean, and intense. Hints of Mediterranean herbs, citrus, juniper, and almond are evident. The aftertaste is lingering and characterized by balsamic, iodine, and citrus notes.

The distillation is slow and meticulous, in a small 100-liter copper still; it's in our distillery laboratory that the botanicals blend with grain alcohol and are transformed: a clean, dry gin emerges, simultaneously complex and profound: the flavor and aroma of Mediterranean scrub, sea, and salty wind. We macerate the aromas for 12 hours, allowing the citrus, thyme, rosemary, broom, juniper, and Modica almond (and more) to unfold their full potential; and when we finally bring it to our mouths, it envelops us with its floral, refreshing, and sea-salty notes.
