GEOGRAPHICAL LOCATION:

This sparkling wine comes from the marly and calcareous soils of Rodello, a highly prized area of ​​the Alta Langa, where the Giribaldi winery is located. Pinot Noir and Chardonnay grapes are grown here to produce sparkling wines that, according to Piedmontese tradition, are strictly made using the classic method of secondary fermentation in the bottle. "Matteo Giribaldi," a young winemaker, began producing Barolo in 2006, a wine that has always been considered a work of art. In 2011, he embarked on his journey with sparkling wine, a work of art for our future. The Pinot Noir (60%) and Chardonnay (40%) vineyards are located in the Rodello area at an altitude of 510 and 560 meters above sea level, respectively, with an eastern exposure.

TECHNOLOGICAL NOTE:

In the 2021 vintage, the grapes are harvested manually in the last days of August. The grapes are gently pressed, using only the free-run juice. Fermentation takes place in steel vats at a controlled temperature of approximately 13-14°C for 28 days. The resulting wine remains in steel for several months, during which time weekly batonages are performed. In early spring, tirage, or secondary fermentation in the bottle, takes place, lasting approximately 60 days. The wine ages on the lees for a minimum of 30 months, according to the production regulations; in this case, for the 2021 vintage, the first bottles are disgorged after 33 months, with the bottles stored horizontally in the cellar's underground cellars. The bottles are then placed on racks for manual riddling, a meticulous and essential preparation for the subsequent disgorgement or final disgorgement.
