The grapes come from the municipality of Novello, at an altitude of 350-400 meters above sea level; this area benefits from a marl-clay composition with good permeability and excellent southern exposure.

The two crus Ravera and Cerviano Merli meet to give life to an excellent Barolo, with the most typical characteristics of these vineyards.

Ruby red in colour with brick-red reflections after a few years of aging, on the nose a pleasant aroma of red fruit, strawberry, cherry and berries with a hint of white pepper , typical of these crus and of the Novello land.

On the palate, a warm sensation of vanilla and red fruits, quite dry, soft and enveloping , with sweet tannins; the spice also returns in the mouth, combining with the fruit in an unparalleled elegance.

VINEYARDS AND SYSTEM

The "organically managed vineyards" are made up of Nebbiolo (10% Michet, 80% Lampia and 10% Rosé) with clonal material of Italian origin. The training system is Guyot with 4,700 plants per hectare, and the yield per hectare is 70 hl.

TECHNOLOGICAL NOTE

Traditional submerged cap vinification for twenty days, with daily pumping over and regular punching down, at a temperature of 30-35°C to aid color extraction. The wine is then racked off, aged for four months in steel tanks, and matured for over two years in French oak barrels. It has subsequently been bottled and stored underground at a constant temperature of approximately 16°C.
