On the nose it is fine and sharp with beautiful notes of fresh yellow fruit.

On the palate , it is crisp and light with a blend of fruit and Alsace Muscat grapes.

A sort of delicate finish combined with a lively acidity make this wine very pleasant and drinkable.

Dealcoholized wine is not comparable to traditional wine.

Only aromas of fermented fruit remain.

Additional details

The dealcoholized wine comes from the traditional production of «Cave de Ribeauvillé», in full compliance with our mandatory «quality charter»

(hand-picked only, sustainable agriculture, HEV level 3 certification).

The grapes grow on steeply sloping vineyards, on the famous geological cliff of Ribeauvillé.

The grapes are pressed whole in pneumatic press tanks to avoid any crushing.

The juices are separated into different qualities to optimize the aromas.

After static racking, fermentation begins at a controlled temperature and then the wine remains
fine lees for at least 3-6 months.

The grapes are harvested exclusively and obligatorily by hand.

Dealcoholization is a 100% physical process, with 0% chemical interaction:

Cold vacuum distillation (33 bar negative pressure).

Alcohol evaporates naturally at 28-30°C to preserve fruit and wine aromas.

Drink made from dealcoholized wine, then concentrated wine must is added to give softness

Contains sulphites

Recommended pairings

Excellent with fish and shellfish. It also pairs well with clam risotto.
