"Lu Fermentate"
Red winemaking technique, characterised by the long maceration of the must with the skins , known as “Lu Fermentate”, which gives the wine a robust structure, a full-bodied and tannic flavour , and a high capacity for ageing .
The process
The grapes are destemmed, crushed, and left to ferment spontaneously in large wooden or steel vats, without the addition of yeasts or sulfites . During fermentation, the cap (grapes collected on the surface of the must) forms, which is mixed into the fermenting liquid through punching down to prevent the skins from acetifying and promote aeration of the must. Maceration of the skins lasts several days, often until the sugars are completely consumed, after which the must is racked, separating the fermented must from the solid residue.

It is a genuine red wine , uninfluenced by fads and faux-pastes, where its so-called “flaws” enhance its complexity, sincerity, and close connection to its place of origin and the noble peasant heritage from which it comes.
