THE SECRET OF LU VINE CUNSERVED
At the heart of the "Lu Vine Cunservate" production process is the Cotta , a key ingredient that gives the wine its distinctive identity. This preparation follows an ancient recipe passed down from generation to generation, based on a patient and meticulous process of boiling and reducing the must .
Cotta is obtained by pouring the must into a large copper "Callara," where it is boiled for a long time, constantly stirring and skimming. This process concentrates the sugars, extracts, and aromas, reducing the initial volume by up to a third. Adding Cotta to the fermenting must is the crucial moment that gives the wine its uniqueness , enhancing its structure, complexity, and drinkability.

It is a genuine wine, uninfluenced by fads and faux-pastes, where its so-called “flaws” enhance its complexity, sincerity, and close connection to its place of origin and the noble peasant heritage from which it comes.

The Sott'a la Capannə wine labels are a photographic account of the history of postwar farming families, under the Capannə hills of Abruzzo. Here, the cultivation of Pergolone enabled the redemption and socio-economic revival of the entire province of Chieti, which, thanks to the intelligence and skill of its winemakers, developed and adapted a new training system for the grape variety, the Capanne.
