TRENTO DOC
The controlled designation of origin “Trento” identifies itself with Trentino
viticultural and requires the use of the classic method of refermentation in the bottle
as the only production system.
GRAPES
The best grapes produced on the hills around the city of Trento are used
in vineyards located between 350 – 600 metres above sea level, with predominantly calcareous soil
limestone with excellent exposure.
VINIFICATION AND FOAMING
After fermentation, the base wine rests on its fine lees until the cuvée is prepared in January. From March onwards, the secondary fermentation takes place in the bottle, followed by maturation on the lees at a controlled temperature for at least 15–20 months before disgorgement.

SENSORY DATA
601 zero dosage has an intense straw yellow color and a fine perlage and
persistent. The aroma is complex and elegant , with good hints of yeast.
the taste is fresh, dry and with a good structure , characterised by strong
ripe and mineral notes. The light acidity is perfectly
balanced by the creamy note given by the permanence on the yeasts and the long
period of refinement. Excellent persistence on the finish .

Trentino is located in the northeastern part of the Alpine arc and borders the province of Bolzano to the north, the Lombardy region to the west, and the Veneto region to the southeast, covering an area of ​​6,207 square kilometers. The region is predominantly mountainous, with 20% of the land above 2,000 meters above sea level and 50% forested.

From an orographic perspective, Trentino lies at the heart of the Dolomite mountain range, which originated from hilltop settlements on the seabed dating back approximately 10 million years. This landscape of unparalleled beauty, recognized as a UNESCO World Heritage Site in 2009, also gives the land its unique characteristics.

In Trentino, grape growing enjoys ideal climatic and geological conditions: to the north, the Dolomites protect the region from cold winds, while to the south, Lake Garda moderates temperatures. The significant temperature variations between day and night, abundant rainfall, and ideal temperatures during the growing season allow for the cultivation and harvest of excellent grapes.

Thanks to these truly unique conditions, Trentino also boasts some surprising native grape varieties, which originated right here in this area, such as Teroldego, Marzemino, and Nosiola.
