Additional details

Sauvignon Blanc is a grape variety with great personality. Grown in the dry, gravelly soil of the Grave di Papadopoli area, it yields immensely satisfying quality. Harvested at the perfect ripeness and vinified with skill and precision, the grapes yield an excellent white wine rich in varietal aromas, with authentic fruity notes of peach and pink grapefruit, and prominent vegetal notes of bell pepper and sage.

PRODUCTION AREA: Vineyards of Tenuta San Giorgio in the Grave di Papadopoli area crossed by the Piave Wine Route.

The Grave lands are of alluvial origin, generated over time by the floods of the Piave River.

They are therefore gravelly alternating with silt and sand.

The rich composition of these dry soils in carbonates and microelements combines with the microclimatic influence of the river to create an ideal soil and climate zone for growing vines.

HARVEST: Early September with perfectly ripe and healthy grapes

VINIFICATION: The grapes, harvested when fully ripe, are destemmed, pressed and left to macerate at low temperatures for a few hours with the specific aim of enriching the must with the grape's characteristic primary aromas.

At the end of the maceration process, the must is removed from the skins and clarified by static decantation, then left to ferment at a controlled temperature using selected varietal yeasts.

After alcoholic fermentation, the new wine is racked and left to mature in steel tanks throughout the winter, awaiting pre-bottling filtration in spring.

Recommended pairings

Excellent with fish and shellfish. It also pairs well with fresh cheeses and grilled vegetables.
