Cabernet is a noble wine with an intense ruby ​​red color with lively purple reflections.

This grape variety, grown on clay soils, produces structured wines that lend themselves well to aging, but the best results are achieved when grown on dry, gravelly soils, such as those of the Grave del Piave, where the Cabernet Sauvignon displays decidedly herbaceous notes and delicately fruity, intense aromas. The flavor is dry and well-structured, with a good lingering finish that recalls the vegetal sensations already perceived on the nose.

PRODUCTION AREA: From the vineyards of Tenuta San Giorgio, cultivated in the "Grave di Papadopoli" and crossed by the Piave Wine Route.

The soils in this area are alluvial in origin, so they are gravelly and rich in silt and sand, but their dominant characteristics are good fertility and a natural and significant quantity of carbonates and microelements useful for the vine.

All these aspects, added to the microclimatic influence of the river, create a pedoclimatic zone and an ideal habitat for the vine.

HARVEST: End of September with polyphenolic ripe grapes

VINIFICATION: The grapes are harvested when fully ripe, destemmed and pressed before undergoing alcoholic maceration in stainless steel fermentation tanks.

Once fermentation is complete, the skins are separated from the wine, which, after two rackings and filtration, is stored in steel tanks and left to mature for 6-8 months.

Before being used, the wine is clarified and re-filtered.

Excellent with red meats and game. It also pairs well with aged cheeses and spicy dishes.
