Additional details

In the vineyard

Pecorino grown partly using the Guyot system and partly using the Abruzzo pergola system at an altitude of around 450 m above sea level on predominantly calcareous, gravelly soils.

In the cellar

Brief cold maceration followed by soft pressing. The must ferments in stainless steel tanks at 12-14°C for approximately 30 days with its own indigenous yeasts.

Clarification occurs through decantation.

Sensory characteristics

Intense straw yellow color with greenish highlights. A very pleasant, aromatic, citrusy bouquet with grapefruit notes.

It has a persistent and very fresh taste thanks to the robust acidic structure of the grape variety.

Recommended pairings

Excellent with seafood. It also pairs well with white meats and medium-aged cheeses.

Serve in white wine glasses at 10-12°C
