The drying technique
Dried grapes are produced using the "cut-pruning" technique. The pruning is performed on the fruiting shoots during the phenolic ripeness of the grapes, interrupting the flow of sap to the berries. The grapes are left to dry in the vineyard for 7-14 days, after which they will have a higher sugar concentration.
