On the lees for at least 85 months and no less than 6-7 before being sold after disgorgement.
Grapes: Chardonnay 60% - Pinot Noir 25% - Pinot Blanc 15%.
Yield: From 70 quintals/hectare.
Harvest: Selection of the finest bunches from the oldest vineyards. Addition of Pinot Noir vinified as a white wine to give structure and longevity.
Vinification : Separate processing of the grapes at perfect ripeness, fermentation with selected yeasts 70% in cement and 30% in barrique, batonnage for 4-5 months.
Color: Deep gold with antique gold reflections and excellent clarity.
Aroma: Very rich in honeyed notes combined with lysate, vanilla and pleasant hints of exotic fruit.
Flavor: Dry yet velvety, thanks to the molecules released by the yeast during the long aging process and the fermentation of the must in contact with the fine French oak. Rich in substance and harmony.
