Vinification: Drying for 3-4 months, after destemming, fermentation with maceration takes place for approximately 20-30 days at a controlled temperature of 26 degrees. The wine is aged partly in 40 hl oak barrels, partly in tonneaux (500 lt) and partly in barriques (225 lt) for 3 years.

Sensory Analysis: Very intense ruby ​​red that maintains good clarity and is very consistent. The aroma is ethereal with notes of ripe fruit, particularly morello cherry, and a balanced sensation of toasted wood and cocoa.

On the palate, it is full-bodied, harmonious, and long-lasting, with great smoothness and balance. An aftertaste of marasca cherries in alcohol.

Recommended pairings

Excellent paired with duck ragù dishes. It also pairs well with roasts and baked lasagna.
