Late harvest of particularly ripe and perfectly healthy grapes, destemming, cold maceration (10 °C) for 12 hours, soft pressing, natural decantation, fermentation at a controlled temperature of 18-20 °C, maturation on the fine lees in steel tanks for 3 months.
