Origin of the grape variety: The first documentary evidence of the origins of Pecorino dates back to 1526 and is contained in the Statutes of Norcia (Pg). Over the course of the twentieth century, the grape was gradually abandoned to make way for more productive varieties such as Trebbiano. The origin of the name is shrouded in the mists of popular tradition, filled with colorful, more or less plausible stories. It ranges from "the sheepherders' grape," consumed by poor people such as shepherds, to "the sheep's grape," because the flocks, during the transhumance, raved about its sweet, yellow grapes.

Vinification: The grapes are harvested by hand between the end of September and the beginning of October
Fermentation with certified organic yeasts is conducted at a controlled temperature. Maturation on the fine lees after fermentation gives the wine complex and powerful flavors.
