Additional details

The harvest is late and takes place manually in the last ten days of October.

The grapes are destemmed, softly pressed and vinified in stainless steel fermentation tanks.

The maceration period, during which the skin remains in contact with the must, is quite long (around 20-25 days).

Once the alcoholic fermentation is complete, the malolactic fermentation begins, after which the wine is racked and left to age for 2 years in barriques.

Once bottled, it ages for a further 24 months in our caves before being released on the market.

Recommended pairings

Excellent paired with red meat dishes such as grilled lamb. It also pairs well with aged cheeses.
