From the sunny vineyards of Puglia comes this full-bodied Primitivo, obtained using the traditional appassimento method . During the ripening phase, the grapes are subjected to a " strangulation" process on the vine so that a period of gradual drying occurs. Once the appropriate sugar content is reached, the harvest and vinification with partial fermentation of the must takes place: this guarantees the natural residual sugar and the right balance between acidity and smoothness. The wine completes its aging in barriques for 8 months and a further 2 months in bottle.
Color: intense ruby red with purple reflections.
Perfume: complex with clear hints of ripe red fruits such as plum.
Taste: very full-bodied, warm and with a long finish; pleasantly sweet.
It pairs beautifully with red meat dishes, mature cheeses and dry pastries.
