AOC Martinique Agricole certified rum.

This rum comes from the distillation in Creole stills of pure fresh sugar cane juice.

It then ages in ex-bourbon American oak barrels.

The final blend involves the use of agricole rums, with a minimum aging of 1 year.

Golden in color, the nose is rich in notes of ripe fruit, among which cherry stands out.

Alongside these, notes of hot spices such as pepper, a light smoky note and rounded aromas of vanilla and bourbon make their way.

In the mouth it is elegant and warm , with a perfect coherence with the olfactory notes, to which is added a pleasant woody hint.

The finish is long and soft, with notes of exotic fruit and spicy notes.

Habitation Saint-Etienne was born near La Maugée.

A sugar refinery whose land extended over 400 hectares at the beginning of the 19th century, from Gros-Morne to Saint-Joseph.

The architectural ensemble, consisting of the residence and the former workers' huts, bears witness to the unique housing system of Martinique. In 1882, Saint-Etienne passed to Amédée Aubéry, who transformed the sugar refinery into a distillery.

In 1909, the property then passed into the hands of the Simonnet family, who developed the distillery until its decline in the late 1980s.

The property was purchased in 1994 by Yves and José Hayot who relaunched Saint-Etienne.

Today, the Habitation Saint Etienne is listed as a Historic Monument, and the distillery is one of the last and finest examples of Martinique's industrial architecture from the late 19th century.

Distillation currently takes place at the Simon distillery, also part of the Hayot group, with its own Creole column.

Recommended pairings

Excellent paired with dark chocolate desserts. It also pairs well with caramel desserts, dried fruit, and blue cheeses.
