In the vineyard, already organically managed, a Precision Viticulture school has been implemented; copper (a heavy metal that accumulates in the soil) has been partially replaced for its antifungal function with chitosan (a natural product extracted from mushrooms and crabs);

The grapes were washed with ozone: this resulted in a perfect microbiological cleansing of the pomace and therefore of the must; subsequently, the selected yeasts that fermented found an absolutely hospitable environment and produced in the fermentation biochemistry a very low quantity of sulfur dioxide of natural origin (less than 6 mg/l against an average natural production of 20 – 25 mg/l).

The sulfur dioxide content was certified by the DOC certification body, Valore Italia, and is therefore official, not self-certified. As a result, it was possible to remove the wording "contains sulfites" from the label, which is mandatory when total sulfur dioxide exceeds 10 mg/l (which is the case on almost all labels in circulation).

The winemaking process followed a cryomaceration process to enrich the must with antioxidants from the pomace. Furthermore, during the maturation period, tannins extracted from green tea were added as powerful antioxidants and therefore replace the antioxidant functions of sulfur dioxide.

The Animologico bottle was processed (empty) to achieve a "molecular transformation" in the oven, resulting in the glass becoming completely black, impervious to light: this was to prevent even the slightest environmental impact on the wine's shelf life. The label is silkscreened, and parts of the lettering are executed in pure gold.
The cork used is smooth and made of sugar cane, completely natural, recyclable and practically impermeable to oxygen, always to avoid any interference with conservation.

Bottling took place cold, in a small environment and inert gas was added to the headspace instead of air to avoid oxidation phenomena.
