Appearance: Deep ebony

Aroma: On the nose it expresses multiple aromas of Mediterranean scrub, rosemary, laurel, pine needles, resins and pine nuts, against a background of light marine puffs.

Flavor: Intense, soft and rounded, in perfect balance with the alcoholic note and rich in returns, between herbs and ripe fruit, towards a decisive and clean finish that carries a long mineral trail.

Curiosity: At the height of the Second World War, all able-bodied men were at the front and working in the countryside to support their families, the young and the old.

But too little is produced to continue, with only the available workforce.

And we also have to fight with the government, which requisitions a large part of the harvest.

Thus, the black market begins to develop, for pure survival.

Everything is hidden and everyone hides everyone.

The wine, stored in large fifty-liter chestnut wood containers, finds its perfect shelter in the countryside, among the shrubs, mostly helichrysum.

The wine keeps well in winter, but in the warmer months everything becomes more complicated: in addition to the scent of helichrysum, it develops a high alcohol concentration and an overpowering bitter note.

No one wants to buy wine that's become undrinkable anymore. So, in the summer, it's discontinued, relegating it to the winter only.

After the war and with the economic recovery in Sardinia, as in the rest of Italy, the fashion for Vermouth spread, a fortified wine invented years earlier by Vittorio Emanuele II of Savoy in the hunting lodge of Turin, where he hosted his lover Rosina.

The young Silvio Carta, already at the helm of the newly founded winery of the same name, found in Vermouth a reference to that contraband wine, immediately understanding that the secret lies in the addition of sugar.

Even today, Elio produces Vermouth from Vernaccia using the ancient recipe, creating a product that is unique in the world.

Recommended pairings

Excellent paired with red meat dishes such as roasts and braised meats. It also pairs well with aged cheeses and desserts made with dark chocolate and dried fruit.
