Additional details

The dealcoholized wine comes from the traditional production of «Cave de Ribeauvillé», in full compliance with our mandatory «quality charter»

(Hand-picked only, sustainable farming, HEV level 3 certification). The grapes grow on steeply sloping vineyards, on the famous geological cliff of Ribeauvillé.

The grapes are pressed whole in pneumatic press tanks to avoid any crushing.

The juices are separated into different qualities to optimize the aromas.

After static racking, fermentation begins at a controlled temperature. Then the wine remains

on fine lees for at least 3-6 months. The grapes are harvested exclusively by hand.

Dealcoholization is a 100% physical process, with 0% chemical interaction:

Cold vacuum distillation (33 bar negative pressure).

Alcohol evaporates naturally at 28-30°C to preserve fruit and wine aromas.

Drink made from dealcoholized wine, then concentrated wine must and carbon dioxide are added to give softness

Contains sulphites

Recommended pairings

Excellent with fish and shellfish. It also pairs well with clam risotto.
